About a two-minute walk from Hatagaya Station on the Keio New Line, quietly set in a calm neighborhood, Sushi Gyosai Toto is a place to enjoy authentic Edomae (traditional Tokyo-style) sushi — the chef shaping each piece by hand with care, using seasonal seafood carefully selected from Toyosu Market.
Incorporating seasonal ingredients chosen from across Japan — yamato-shijimi (small freshwater clams) from Aomori, kuruma tiger prawns from Kumamoto, scallops from Hokkaido, and more — each plate expresses flavors that mirror the four seasons. Beyond the nigiri finished with sure judgment and seasoned skill, there is a full lineup of seasonal specialty dishes and carefully selected fine sake.

Our recommendations are three courses: the “Nigiri Selection Course” at 12,000 yen (incl. tax), the “Toto Course” at 18,000 yen (incl. tax), and the “Gyosai Course” at 26,000 yen (incl. tax).
From a sakizuke (an opening appetizer), small seafood-and-vegetable dishes, sashimi, and chawanmushi (savory steamed egg custard) to nigiri and a sweet to finish, each is composed with an abundance of seasonal ingredients and offers its own distinct appeal.
A further highlight is savoring carefully selected ingredients from across Japan that are unique to the season — a clear soup of yamato-shijimi (small freshwater clams) from Aomori, kuruma tiger prawns from Kumamoto, scallops from Hokkaido, and more.
The top-tier “Gyosai Course” also makes lavish use of steamed abalone, Kuroge Wagyu, and other treats. Because the contents change with sourcing and the season, you can savor the seasonal flavors of the moment to your heart’s content, paired with specially chosen fine sake.
Beyond the courses, you can also savor the chef’s Edomae (traditional Tokyo-style) nigiri à la carte. A varied array of seasonal flavors appears — soy-marinated lean tuna, chutoro (medium-fatty tuna), kohada (gizzard shad), and a lavish hand roll of seared kamatoro (fatty tuna from the collar) topped with sea urchin and caviar.
The red-vinegar rice is paired with nikiri (a sweetened, reduced soy sauce) made with Tosa soy sauce, so the aroma of bonito gently spreads the moment it reaches your mouth, drawing out the ingredients’ natural umami all the more. The nigiri made with fresh ingredients is rich and thick yet clean on the bite, letting you taste its unity with the natural sweetness of the plump, distinct grains of rice.
Alongside carefully chosen sake and shochu, there is also an original beer developed jointly with a local craft brewery. Do try the two different flavors — red and blue — each crafted to bring out the appeal of the sushi.
Designed by a creator behind many renowned restaurants, the interior sets a calm space that treasures the time spent facing the sushi.
In addition to counter seats, there is a fully private room furnished with a simple, elegant custom-made wooden table and relaxing chairs by Italy’s Cassina, accommodating a wide range of occasions from dinners and anniversaries to families with children.
A projector and screen are also fully equipped, making it ideal for small gatherings as well.
Its easy-to-reach location is another draw — about 10 minutes by taxi from Shinjuku Station and about 15 minutes from Shibuya Station.
Fresh fish caught on Sundays by a staff member whose hobby is fishing is often served on Mondays, offering the pleasure of encountering special flavors unique to the day.
