An art space × restoring yourself with Japanese-style tori paitan (rich, milky chicken broth)
A five-minute walk from Exit A2 of Omotesando Station.
Head inside the back streets and a stylish, open, glass-walled building comes into view, with the polished air of a fashionable café at first glance.
At the hideaway samgyetang (Korean ginseng chicken soup) specialty restaurant "shiari samgyetang," this traditional Korean dish is fused with Japan's umami culture to serve a soup that is richer and deeper in flavor than the usual light version.
Easy to use for lunch or dinner, it is also known as a beauty food recommended for summer fatigue and for warming the body and caring for the gut, making it a good choice when you want to settle your stomach and your mind in Omotesando.
Incidentally, "shiari," which is also the restaurant's name, may look like Korean at first glance, but it is in fact the real name of the Japanese owner.
The menu is a single course only: "Rich Samgyetang," 2,700 yen (tax included).
The six side dishes served first are each composed with good balance and color. The main chicken paitan (rich, milky broth) simmers on a burner fitted at every seat and is topped right in front of you, so there is a live feeling right up until it is served.
Although the broth is rich and simmered until the bones are tender, it is gentle on the body, and despite its richness the aftertaste finishes light. The secret to this umami is said to be a dashi drawn carefully from yakuzen (ingredients used in medicinal cuisine) such as Korean ginseng, along with kombu (kelp) and dried shiitake, plus a rich paitan broth simmered for eight hours.
The standard gochujang, harissa, and lemon pepper are set on the table, so you can enjoy shifting the flavor as you go.
Extra rice is free, so finishing everything together with the closing soup is also recommended.
Another appeal is that the drinks, not just the samgyetang (Korean ginseng chicken soup), are a lineup found only at this restaurant.
The yakuzen (medicinal cuisine) teas, made with care by a medicinal-cuisine specialist and served in cute, photogenic bottles, come in three kinds based on hojicha (roasted green tea), genmaicha (green tea with roasted brown rice), and Japanese black tea. Each can be chosen cold or hot.
Besides these, there are assorted beers famous in Korea such as "TERRA," "CASS," and "KELLY," as well as unusual Korean liquors and wines carefully selected by a sommelier.
"Boksoondoga," also known as makgeolli (Korean unfiltered rice wine) champagne, comes in two kinds, white and pink; the pink is slightly fruity and the white carries the character of traditional makgeolli, making it a drink menu item that is highly popular with women.
A Korean neon sign can be seen from the counter inside. Its meaning carries the concept message of "shiari samgyetang": the wish that "your tomorrow may be more beautiful than today…"
The art and the attention to detail inside are wonderful as well, and the many framed photographs displayed on the menus and the walls are all said to have been taken by professional photographers. It is a space where you can spend calm hours facing the samgyetang at your own pace.
Because every seat is at the counter, it is also easy to come in alone. And since it is a beauty food recommended for summer fatigue and for warming the body and caring for the gut, health-conscious diners, and those coming with friends or a partner, can enjoy Japanese-style samgyetang in all kinds of settings.
