Refined Traditional Unagi Dining in the Heart of Ginza

Located within Ginza Glasse, a sophisticated commercial complex in Ginza lined with luxury boutiques, Maruya Honten Ginza Glasse is a specialty restaurant dedicated to authentic Nagoya-style hitsumabushi (grilled eel over rice). Each eel is meticulously grilled one by one, achieving perfectly crisp, aromatic skin and remarkably tender, fluffy flesh. Reflecting Ginza’s refined character, the restaurant also offers luxurious selections such as gold leaf–topped hitsumabushi and elegant lunch sets. Set in this internationally vibrant district, guests can fully immerse themselves in Japan’s traditional culinary heritage. Whether for business dining, a lunch or dinner break between sightseeing, or a special meal with someone important, it is an excellent choice for a wide variety of occasions.

  • Premium eel rich with natural fat

  • Expertly grilled—crisp on the outside, tender and fluffy inside

  • The decisive flavor comes from a time-honored secret sauce

  • “Hitsumabushi – Premium” ¥6,500 (tax included)

  • “Gold Leaf Hitsumabushi” ¥9,450 (tax included)

The signature dish of Maruya Honten, hitsumabushi (Nagoya-style grilled eel over rice), features fragrant kabayaki (sweet soy–glazed grilled eel) carefully arranged over rice. Enjoy it first as is, savoring the rich eel coated in savory sauce. Add condiments such as green onions, wasabi, and shredded nori (seaweed) to enhance the aroma and depth of flavor. Finally, pour over dashi (Japanese soup stock) to transform it into a refreshing ochazuke (rice with broth)-style finish. This unique way of enjoying multiple flavors in a single bowl embodies both the delicacy and playful refinement of Japanese cuisine. You can fully appreciate the distinctly Japanese sensibility of savoring changing flavors in one exquisite serving. For a truly special experience befitting Ginza’s elegance, the “Gold Leaf Hitsumabushi” ¥9,450 (tax included) is also highly recommended.

  • Lunch Set “Sakae” ¥5,500 (tax included)

  • “Ichigo Ichie Set (includes takeaway chopsticks)” ¥14,500 (tax included)

  • “Nagayaki (whole grilled eel glazed with sauce)” ¥5,150 (tax included)

  • “Uzaku (eel with vinegared cucumber)” ¥1,950 (tax included)

  • “Hitsumabushi Bento – Premium” ¥5,450 (tax included)

The Lunch Set “Sakae” ¥5,500 (tax included), which includes mini hitsumabushi, umaki (Japanese omelet with eel), and sashimi, as well as the “Ichigo Ichie Set (includes takeaway chopsticks)” ¥14,500 (tax included), featuring even snow crab, are thoughtfully composed to highlight the natural flavors of premium ingredients. These beautifully arranged sets reflect the refined aesthetic sensibilities of Japanese cuisine and are highly praised for their satisfying variety and balance. The “Unagi Nagayaki” ¥5,150 (tax included) allows you to enjoy a whole eel fillet grilled to perfection, fluffy and rich in flavor. For a lighter option, “Uzaku” pairs aromatic eel with refreshing vinegared cucumber, creating a pleasantly balanced dish that is popular as a palate-cleansing accompaniment. Takeout bento (boxed meals) are also available, making it possible to enjoy authentic flavors while traveling or relaxing at your hotel.
