The restaurant's signature kawa-yaki skewers are marinated in a secret sauce and slowly prepared over a period of six days. In addition to delicious skewers, another attraction of this restaurant is that you can enjoy exquisite Hakata gourmet dishes that originated in Hakata. The 〈Hakata hot pot with vegetables〉 for 1 person ¥1,400 (tax included) / for 2 persons ¥2,400 (tax included) is a very popular menu item that has many fans. Two flavors are available: light soy sauce and rich miso (soy sauce and miso). The beef entrails are served in a rich broth that is full of the flavor of the entrails and vegetables. "Hakata Kawaya's chicken skin" takes a week to prepare. We would like to introduce their secret process.
First, only the thinnest, softest, and least fatty part of the skin is used, and each piece is carefully skewered one by one. This is a time-consuming process, taking 2.5 minutes per skewer, even for veterans.
In the grilling process, it is first grilled without any sauce, and then marinated in sauce for the second and subsequent times. Kawaya is particular about changing the sauce used for the first baking and the sauce used after the fourth baking. By using different sauces, the flavors soak in.
The process of marinating the skewers in the secret sauce, then grilling them and letting them rest for a day is repeated for six days. The fat is skimmed off the skewers, resulting in a crispy outside and a chewy inside. After six days, the chicken skin is smaller because the fat has been removed, and the color is deepened by the secret sauce soaked into the chicken skin.
