The “Chef’s Choice Omakase” course consists of a diverse menu using seasonal and fresh ingredients of the day, selected by the restaurant owner. The menu changes daily and a sample menu is shown here. The bluefin tuna sourced from the fish market in Toyosu has a different flavor depending on the cut of the fish. The lean “akami” has a deep richness to it, while the medium fatty “chu-toro” has a soft, smooth texture, and the fatty “oo-toro” is so tender it will almost melt in your mouth. The conger eel is cooked to a very soft texture, which perfectly complements the sushi rice, creating a delicate texture and sophisticated taste. There is also something special about the sushi rice served at “Hazan.” 3 different types of rice and vinegar are blended together and carefully cooked with adjustments made depending on the ambient temperature and humidity. The rice has a firm yet moist texture and the right amount of stickiness to it that goes well with the toppings and enhances the delicate flavors of each sushi.
The unique and creative delicacies of“Hazan” will grab your attention as well. In particular, the renowned tiger prawn nigiri is an exquisite dish, with Japanese glass shrimp placed in-between the sushi rice and tiger prawn. The umami of kombu seaweed enhances the sweetness of the shrimp, while the delicate texture of the tiger prawn and the rich flavor of the glass shrimp combine to create a delicious symphony of flavors in your mouth. The hand-rolled sushi, featuring a generous amount of horse-dung sea urchin and purple sea urchin, is a delectable treat that offers a rich combination of flavors in one bite.
