The highlight of "sez" is the dinner course that opens with the “hassun,” showcasing the harmony of Japanese tradition and seasonal ingredients. Dishes include turtle soup, snow crab croquette, and fresh fish directly shipped from Kochi, bypassing the usual Tokyo markets. The eel is slowly grilled over charcoal, then paired with red wine sauce and cheese for an Italian-inspired twist. Handmade pasta, charcoal-grilled wagyu tenderloin, and more are presented in a refined balance. The wine list is complemented by non-alcoholic pairings such as green tea, catering to all preferences.
