Chef-owner Mr. Nakano follows the philosophy of Shuhari: faithfully preserving traditional Japanese culinary fundamentals (shu), breaking away with modern innovation (ha), and ultimately creating new value through his unique expression (ri). The restaurant’s signature dish is Grilled Sesame Tofu. Made with Yoshino kudzu flour, kneaded for over an hour, then charcoal-grilled just before serving, it offers a crisp, fragrant surface with a soft, chewy center. Paired with sesame sauce and roasted sesame, it delivers rich aroma and deep umami. In addition, seafood dishes prepared with techniques such as fermentation, aging, and straw grilling maximize the blessings of each season.
